Paleo diet has always been difficult to take very seriously.

People are very individual, and diet is never one-size-fits-all. Meals can be found, but only for just so many people.

People can become tolerant to foods later, sure. Salt was not added to foods in the Paleolithic Era. Salt is not necessary if you are eating fresh foods.
